Utili~y service lines and pipes shall not be <br />unnecessarily exposed on walls or ceilings in those areas listed in paragraph <br />(2) of subsection (b) of this rule. <br /> <br />(5) Attachments. Light fixtures, vent covers, wall-mounted fans, <br />decorative materials, and similar equipment attached to walls and ceilings <br />shall be easily cleanable and shall be maintained in good repair. <br /> <br />(6) Covering Material Inst~llation. Wall and ceiling covering <br />materials shall be attached and sealed so as to be easily cleanable. <br /> <br />(c) Cleaning'Physical Facilities. <br /> <br />(1) General. Cleaning of floo'rs and walls, except emergency <br />cleaning of floors, ~hall be done during periods when the least amount of food <br />is exposed, ~uch as after closing or between meals. Floor, mats, duckboards, <br />walls, ceilings. and attached equipment and decorative ma'terials shall be kept <br />cle~n. Only dustless methods of cleaning floors and walls shall be used. such <br />as vacuum cleaning. wet clean~ng, or the use of dust-arresting sweeping <br />compounds with, brooms. <br /> <br />(2) Utility Facility. In new or extensively. remodeled <br />establishments at least one utility sink or curbed cleaning facility with a <br />floor drain shall,be provided and used for the cleaning of mops or similar wet <br />floor cleaning tools and for the disposal of mop water or similar liquid <br />wastes. The use of lavatories, utensil-washing or equipment-washing, or food <br />preparation sinks for this purpose is prohibited. <br /> <br />(d) Lighting. <br /> <br />(I) General. At least f(ft~(50) foot candles of light shall be <br />provided to all working surfaces and at least thirty(30) foot candles of light <br />shall be provided to all other surfaces and equipment in food preparation, <br />utensil-washing, and.handwashing areas, and in toilet rooms. At least <br />twenty(20) foot candles of light at a distance of thirty(30) inches from the <br />floor shall be provided in all other areas, except that this requirement <br />applies to ~ining areas only during cleaning operations. <br /> <br />, ' <br />(2) Protective Shielding. <br /> <br />(A) ~hielding to protect against broken glass falling onto' <br />,food shall be provided for all artificial lighting fixtures located over, by, <br />or within food storage, preparation, service, and display facilities, and <br />facilities where utensils and equipment are cleaned and stored. <br /> <br />(B) Infra-red or other heat lamps shall be protected against <br />breakage by a shield surrounding and extending beyond the bulb, leaving only <br />the face of the bulb exposed. <br /> <br />(e) Ventilation. <br />
